Learn how to cook Empanadas de Platano Maduro (Plantain Empanadas) served with a side of rice & beans with married couple Valeria & Kenneth and Bianchi’s Group Ben Harvey. Aid Box Community’s online cookalong courses are a simple, fun, and engaging way of learning how to cook international foods with refugees based in Bristol.
We are so excited to see Kenneth and Valeria cook this unusual sweet and salty dish which hails from their home country of Nicaragua. This is a simple vegetarian dish (with vegan option) that is a classic in Latin America, truly loved by all!

Valeria & Kenneth live in a hotel, where they don’t have the opportunity to cook for themselves.
